This is the best coconut cake ever. I make this several times a year. It is so delicious, it is one of my top favorite cakes. It is essentially 12 layers, thus the mile high. It’s a beautiful addition to a holiday buffet.

This is ridiculously easy, even if the name is hard to pronounce (pap-eee-yote). As long as you can wrap Christmas presents, you can make this dish! It lends itself well to almost any fish, but I’ve only done it with tilapia, mahi mahi, and salmon.

This is the best salad dressing in the whole world. No, I’m not exaggerating. This stuff is to die for. (The only bottled kind that comes close is chipotle ranch made by “Cindy’s Kitchen,” so kudos to her.)

If you are a fan of cilantro, this sauce is a must! You can eat it with chips. It’s great with broiled fish. It’s great to dab a grilled steak bite into. It’s great on grilled chicken. It’s just an all-around great tasting sauce with a wide variety of uses!
