Description

I have made this sauce probably hundreds of times and it never fails to please! I have even allowed this to simmer and reduce further to make a very deep, rich dipping sauce. Easy to change up as well. I love adding roasted red peppers if I have them on hand.

Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 whole Yellow Onion, Diced
  • 3 cloves Garlic, Minced
  • 3 whole Sun-dried Tomatoes Packed In Oil, Drained And Chopped
  • ½ cups Dry White Wine
  • 1 can (about 15 Oz. Size) Fire-roasted Tomatoes
  • 1 can (about 28 Oz. Size) Tomato Sauce
  • 1 Tablespoon Dried Oregano, More To Taste
  • 2 Tablespoons Fresh Basil, Chopped, More To Taste
  • Salt And Pepper, to taste

Preparation

Heat oil in a medium saucepan over medium-high heat. Saute onions until they just start to turn golden brown, about 3-5 minutes. Add garlic and sun-dried tomatoes. Saute another 2 minutes, until garlic is lightly toasted. Be sure not to burn the garlic as it will turn bitter.

Deglaze pan with wine. Simmer for 1-2 minutes, until wine reduces by half. Stir in tomatoes and tomato sauce. Reduce heat to medium-low. Stir in oregano and basil. Season with salt and pepper. Allow to simmer 10-15 minutes, to slightly reduce and thicken sauce.

I made this tonight, and it is delicous. I haven’t used it in a dish yet… I just needed to use up some fresh basil. But so far the taste tests have all gotten rave reviews from my family. I had to guess a little on my sun-dried tomotoes, since the only ones I could find were already chopped. But I think I did OK. Thanks for a great and easy recipe!!
