Description

A crunchy and delicious granola, flavored with pumpkin, spices, maple syrup, brown sugar and pumpkin seeds. You’ll be snackin’ on this tasty treat all day.

Ingredients

  • 3 cups Old Fashioned Oats
  • 1 cup Chopped Walnuts
  • 1-½ teaspoon Pumpkin Pie Spice
  • ½ teaspoons Cinnamon
  • ½ teaspoons Salt
  • ¼ cups Brown Sugar
  • ½ cups Canned Pumpkin Puree
  • ½ cups Melted Coconut Oil
  • ⅓ cups Maple Syrup

Preparation

Preheat oven to 350 F. Line a large rimmed baking tray with a Silpat mat or parchment paper. Set aside.

In a large bowl, combine the oats, walnuts, pumpkin pie spice, cinnamon, and salt. Set aside.

In a medium bowl, whisk together the brown sugar, pumpkin, coconut oil, and syrup until thoroughly combined.

Pour the pumpkin mixture over the oats and stir well, ensuring that the oat mixture is entirely covered. Spread granola evenly onto prepared baking sheet and place into oven.

Bake for 25-30 minutes until golden brown, stirring every 10 minutes to avoid burring. Remove from oven and let it cool completely on the baking tray. Enjoy!

Notes: Granola will keep in an airtight container for up to one month.
