This is a modification of taco soup and tamale pie (courtesy of Atlanta Chef Rosemary Rutland). Super easy to make. The best part, is you can modify it with any kind of beans or meat you like. Great weeknight dinner!

A search for gluten and dairy free recipes for my daughter led me to this one. Due to the unusual ingredients, I just had to try it. I adjusted the recipe and ended up with an amazingly moist and yummy cake. Even my healthy-food-phobic friends love it!

Most flourless cakes have lots of butter. This one requires less than 1 stick of butter, but is still rich, decadent, and moist. It has few ingredients and is extremely easy and quick to make.

Shredded zucchini replaces meat in this simple and delicious meal. You can make it as low fat as you like. I like to use the garden veggie spaghetti sauce for added flavor.

Savoury filled puff pastry parcels. The pithivier is a french style pastry parcel, traditionally sweet but it can be altered to take savoury fillings.

This tomato and black bean mixture is so flavorful warmed up between layers of cheese and a crispy tortilla. Leftovers are also wonderful as a refreshing salsa with tortilla chips or rolled up in a burrito. If you’re looking for even more protein, go ahead and throw in some cooked chicken.
