This creamy treat was made in honor of World Autism Awareness Day. Many of these amazing children are on gluten- and dairy-free diets. The promoters of the awareness movement urged everyone to wear blue on April 2nd. Blueberries seemed like the obvious tribute.
This pie is so decadent and delicious you would never guess how easy it is. Can you believe it only has 4 ingredients? Coconut, butter, chocolate chips, and coconut milk! This is my kind of dessert!

Some people don’t know what to use as a replacement for cream or half-and-half when making mashed potatoes, but I’ve found that the SO Delicious coconut creamer works perfect! It makes the potatoes creamy and moist and leaves absolutely no taste of coconut because it has a very neutral flavor. I have 2 versions: a sweet version made with spiced apple butter and a sweet ‘n spicy version made with adobo sauce.
When my little girl tried this she said, “Oh, this is my favoritest ever!” Not only does it taste great but it is super easy to make—just grab a lunch-sized brown paper bag with scotch tape and you’ll be ready to go!
For this pie I used only 12 ounces of canned pumpkin (3/4 can) so the flavors and spices can really shine through. I also chose to use SO Delicious coconut creamer in place of the evaporated milk because it has such a such a creamy, neutral flavor. Mmm … pie!
