A crunchy sweet pickle with a unexpected bite. So tasty!
Peel and cut the cucumbers into serving-size pieces. Pack the cucumbers into the jars on top of the garlic, dill and chili pepper flakes. Preheat oven at this point to 250F.
Add all the brine ingredients to a large pot, and heat until boiling. Turn it down to low, and start filling your jars. When all jars are filled, add them to the oven and TURN IT OFF. Remove them from the oven after 60 minutes and let cool until they seal.
Store any unsealed jars in the refrigerator. Serve cold.

I love sweet and spicy. If my cucumbers produce a bit more now that the weather is cooling off I can give this a try pretty soon!
