When life gives you over-ripe bananas, don’t go conventional, make Banana Curd instead! It’s creamy, dreamy and ohhhh so rich! Great as a spread alone but also great in fillings for desserts, rolls or just use your imagination! This is by far the best tropical curd!
In a blender, puree bananas and lemon juice till smooth.
Whisk egg yolks lightly in a small bowl.
Using a double boiler, mix sugar, butter and banana juice on high heat till mixture is completely blended and sugar is somewhat dissolved – use a whisk to stir.
Add pureed bananas to mixture, completely blend in. Slowly add egg yolks in a ribbon pour, stirring quickly with a whisk, so eggs don’t cook, and keep whisking until fully blended. Add extracts and blend.
Stir occassionally over high heat, boiling for 15-25 minutes or till mixture is thickened.
Turn off heat, let curd sit in double boiler for 5 minutes without stirring. Stir once more. Remove the bowl from the double boiler and set aside to allow curd to completely cool.
Once cool, stir it again and spoon into container/jars and refrigerate.
