Description

Who doesn’t like fried zucchini?!

Ingredients

  • 1-½ cup Parmesan
  • 1-½ cup Bread Crumbs (such As Panko)
  • ½ teaspoons Salt
  • 2 whole Extra Large Eggs
  • 3 whole Medium Sized Zucchini, Washed, Trimmed (but Not Skinned), Cut Into 3-inch-long By 1/2-inch Wide Strips
  • ½ cups Canola Oil (more If Needed)

Preparation

Heat oil in a pan or skillet on medium heat.

Mix Parmesan, bread crumbs, and salt in a bowl. In another bowl, whisk eggs together.

Prepare zucchini (3-inch long by 1/2-inch wide strips)

Dunk zucchini in egg to coat, let excess drip back into the bowl.

Coat zucchini on all sides with bread crumb mixture, pressing so that the bread crumbs stick.

Fry zucchini strips (in batches if needed) in oil until they are golden brown. This takes about 3 minutes.

Drain on paper towels. Serve with any type of dipping sauce you would like (ranch, marinara, aioli, pizza sauce)!

** I am thinking of adding some Italian seasoning in with the bread crumbs, or some other type of herbs and spices. I think that would add some extra flavor.**
