Description

This is one of my go-to holiday gifts. It never fails to please. Take it a get-together and watch it disappear in no time. Our family and friends call it addictive. I totally agree!!!

Ingredients

  • 2 bags Microwave Butter Popcorn (See Note)
  • 1 bag (12 Oz.) White Chocolate Chips (Chopped White Almond Bark May Be Substituted)
  • 1 can (Small) Mixed Nuts (See Note)
  • 1 bag (6 Oz.) Dried Cranberries

Preparation

* Notes about the ingredients:

1. You MUST use butter-flavored popcorn. I use 94% less fat butter flavor, and it works great. It takes about 7 cups of popped corn to make this recipe.

2. You can use all cashews, honey roasted peanuts, or whatever you like for nuts. Feel free to add more to the mix you you want more nuts!

Directions:

Pop the popcorn in the microwave according to package directions. Pick out all the unpopped kernels (I spread the popped corn on a 15×10-inch baking sheet and pick through it). Place popcorn in a LARGE bowl. Add nuts and cranberries; toss together to mix.

Place the white chocolate chips in a large glass measuring cup or glass bowl, then put it in the microwave on 50% power for 40 seconds. Remove from microwave and stir. If not completely melted, return to the microwave and repeat the process JUST until the chips are melted and creamy.

Pour melted white chocolate over the popcorn; toss to coat. Spread mixture onto trays; allow to dry.

Break large chunks apart. Store in an airtight container.

This is a very simple treat that is easy to make. My kids love it and I know that it has a good mix of healthy and sweet. Really yummy.
