Description

I am so addicted to granola and the flavor of this granola is out of this world. If you like vanilla, you will love this granola!!

Ingredients

  • ½ cups Almonds
  • 3 cups Rolled Oats
  • 2-¼ cups Steel Cut Oats
  • ½ cups Ground Flax
  • ¼ cups Unsweetened Shredded Coconut
  • ¼ cups Sesame Seeds
  • ⅓ cups Vanilla Extract
  • ⅓ cups Canola Oil
  • ⅓ cups Brown Sugar

Preparation

Preheat oven to 300 F.

NOTE: You can make this without using the food processor. If so, just put all the dry ingredients in a large bowl and proceed to step 2.

1. In a food processor ground your almonds into small pieces, about 10 pulses. Add your rolled oats and process until small but not flour consistency. Add the rest of the dry ingredients (down to the sesame seeds on the above list) and pulse for about 10 pulses. Dump into a big bowl.

2. In a small bowl, add your vanilla extract, canola oil and brown sugar. Whisk until combined. Pour over granola mixture and stir until everything is coated.

3. On a baking sheet lined with parchment, add your granola. Bake for 20 minutes, use a spatula to flip everything over and bake for 20 more minutes, flip. Check it the last 10 minutes or so to make sure it doesn’t burn.

4. Turn the oven off and leave the granola in there to cool. I do this so my dogs don’t get at it. Just make sure it doesn’t get too crispy or just leave it on the counter to cool.

Once cool, store in an air tight container.

Makes 21, 1/2 Cup servings.

Very good! I used hemp seeds instead of sesame and pecans instead of almonds. Wow, plenty of vanilla but oh so good all cooked up!
