Light, crispy, delicious!
Grab the can of tuna, in spring water or in oil (both are fine). Put the tuna in a bowl and use a fork to crumble it. Add the ricotta cheese, parmesan cheese, egg, 3 tablespoons bread crumbs, salt and parsley and with your hand, mix all ingredients until well combined.
Also with you hands, form small flat balls the size of a chestnut and coat each ball in the remaining 1/4 cup bread crumbs. Fry in hot oil on both sides for about 3–4 minutes per side. Remove from the oil and serve with a fresh salad!
