Description

Zesty tomatillo salsa. Because we all could use a little more zest in our life.

Ingredients

  • 1 pound Tomatillos, Husks Removed & Washed
  • 1 whole Small Onion
  • 2 whole Garlic Cloves
  • 3 whole Jalapenos
  • ⅓ cups Fresh Cilantro Leaves
  • 1 teaspoon Salt

Preparation

Chop the onion in half (you can leave the peel on), separate all of the cloves of the garlic (again, you can leave the peel on), and leave the jalapeños and tomatillos whole. Roast all of these on a baking sheet in a 400°F oven for about 15 minutes, turning everything over half way through roasting time.

Once they are done and a little cooled, peel the garlic, deseed and rough chop the jalapeño, peel and rough chop the onion.

In a food processor, add all roasted ingredients, plus cilantro and salt and pulse until all ingredients are chopped and desired consistency is reached.

This was wonderful. It was very easy and quick and I think the roasting brought out so much sweetness in the tomatillos. I will be making batches of this as the tomatillos in my garden ripen!

I was wondering if you’ve ever frozen or canned this salsa? I was considering freezing some of it, but it would probably turn brown without the addition of some lime or lemon juice. Do you have any suggestions?

My husband requested salsa verde and I’m glad I found this recipe! We like the heat from serranos so used 2 serranos and 1 jalapeno.

Very good, easy recipe! I was a bit short on time, so I roasted these under the broiler, it cut the time in half. I also added a roasted habanero and the juice from one lime. Excellent!
