Description

I love me some good cheese! The only thing I don’t love about a lot of cheese balls is that most roll them in nuts. I have an allergy to some nuts, so I came up with my version.

My family and friends love it so much, I decided to give it to my neighbors for Christmas.

Ingredients

  • ½ cups Sour Cream
  • 8 ounces, weight Cream Cheese, Softened
  • ½ envelopes (about 1 Oz. Envelope) Dry Ranch Dressing Mix
  • 2 cups Shredded Sharp Cheddar Cheese, Divided
  • 1 cup Shredded Pepper Jack Cheese
  • 2 stalks Green Onions, Finely Chopped
  • 6 slices Bacon, Cooked Crisp

Preparation

In mixing bowl, cream together the sour cream, cream cheese and dry ranch mix. Add half of the sharp cheese, the pepper jack cheese, green onions and crushed crisp bacon. Fold until blended.

Place mixture on a piece of plastic wrap and shape into a ball as best you can. Chill for at least 1 hour.

Take the ball out of the plastic and smooth it with your hands. Roll the cheese ball in the remaining sharp cheddar cheese. You might need to press the shredded cheese into the ball if it is too cold and firm.

Serve with crackers. Store tightly wrapped in the fridge.

Love this! Great to idea to just roll the thing in cheese. Somehow I missed that it called for pepper jack so I used mozzarella and chopped up a few pepperoni and jalapeños to make up for it. Literally just s couple rings–5 or 6. Can’t wait to enjoy on Christmas Eve!
