I would put this guacamole up against any other one out there. Whenever I serve this I’m always told, “This is the best EVER,” and am asked for the recipe immediately! And while it might go against what you think you know, make sure you use LEMON not lime, because it definitely makes a difference. I’ve made this in a molcajete (the traditional vessel for making guacamole) and a bowl with no great difference in results.
Mince garlic, then generously sprinkle with Kosher salt. Using the flat side of your knife and a downward pressing/sweeping motion, mash garlic into a paste. Add more Kosher salt as necessary, as it acts as an abrasive but breaks down as you are mashing. Alternatively, use a molcajete to make your garlic paste. (DO NOT SKIP THIS STEP!)
Put all ingredients in a large, shallow bowl and mash with a fork until you reach the desired consistency. If using a molcajete, dice avocado smaller to begin with and carefully fold ingredients together.
Taste and adjust salt if needed. Serve immediately.

This was really good. I have friends who are from Guatamale and they put the avocado pits in the guacamole to keep it from turning brown – if it sits that long! Thank you

You can, but then make sure to add salt later on.

Can I just use a garlic press? It’s the same result correct?
