Description

This is the best corn salsa you will (probably) ever have. So full of fresh ingredients and healthy too! Perfect for a summertime get-together. Enjoy! (Recipe adapted from Southern Living magazine).

Ingredients

  • 3 ears White Corn
  • ¾ cups Water
  • 3  Medium Tomatoes
  • 2  Jalapeno Peppers (or You Can Use Several Slices Of Jarred Jalapenos)
  • 2 cans (15 Oz. Size) Black Beans, Rinsed And Drained
  • 1 cup Fresh Cilantro, Chopped
  • ⅓ cups Fresh Lime Juice (about 4-5 Limes)
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 2  Avocados (optional)

Preparation

Cut corn kernels from the cob and put them into a medium saucepan; add 3/4 cups water and bring the corn to a boil. Once boiling, cover the saucepan, reduce heat, and let simmer 6-7 minutes or until tender. When done, drain the corn and transfer to a large bowl.

Peel, seed, and finely chop the tomatoes; add them to the corn. Seed and mince the jalapenos; add them to the corn along with the beans and the next 4 ingredients. Stir gently and chill the mixture.

When ready to serve, peel, pit and chop the avocados. Gently stir the avocados into the corn mixture and serve with tortilla chips. Makes about 8 cups.
