Ingredients

  • FOR THE CUCUMBER RELISH:
  • 1 whole Kirby Or Small Cucumber, Diced
  • ½ whole Red Jalapeno Or Hot Pepper, Minced
  • 2 Tablespoons Rice Vinegar
  • ½ teaspoons Fish Sauce
  • FOR THE GUACAMOLE:
  • 2 whole Ripe Avocados, Diced
  • ½ teaspoons Fish Sauce
  • ¼ whole Lime, Juiced, Plus More If Needed
  • ¼ cups Chopped Cilantro
  • ½ whole Red Jalapeno Or Hot Pepper, Minced
  • ¼ cups Chopped Cashews, For Garnish

Preparation

For the relish, combine cucumber, hot pepper, vinegar, and fish sauce in a small dish. Stir to combine and let marinate while you make the guacamole. Right before serving, drain in a small colander.

For the guacamole, gently stir avocado, fish sauce, lime juice, cilantro, and hot pepper. Taste, and add more fish sauce for salt or lime juice for tang.

To serve, spread the guacamole in a flat dish. Top with the cucumber relish and sprinkle the cashews over the entire dish.

Serve with tortilla chips or rice crackers. Enjoy!
