Description

Sweet, spicy and crispy cauliflower. A vegetarian treat your family and friends will love.

Ingredients

  • 1 head Cauliflower
  • 1 cup Flour
  • 1 Tablespoon Cornstarch
  • 1-½ cup Ice Cold Water (Seltzer Water Is Even Better)
  • 1 pinch Salt
  • 1  Mango, Peeled, Pitted, And Diced
  • ½ cups Sweet Chili Sauce
  • 1 teaspoon Soy Sauce
  • 1 teaspoon Garam Masala
  • 1 stalk Green Onion, Chopped
  • Canola Oil, For Frying

Preparation

1. Break the head of cauliflower into florets.
2. Bring a medium pot of water to boil. Add a pinch of salt and put cauliflower in.
3. Boil for about 10 minutes. Drain and allow to dry.
4. In a bowl mix flour, cornstarch, water and salt until smooth and all the lumps are blended out.
5. In a deep pot bring an inch or two of oil to a temperature of 150°C.
6. Place cauliflower into batter a few florets at a time to ensure they are coated well and place slowly into the hot oil.
7. Cook in small batches until the batter turns a nice golden brown.
8. Use a kitchen spider or slotted spoon to scoop cauliflower onto a plate with some paper towels. Repeat frying the rest.
9. In a saucepan add diced mango, sweet chili sauce, soy sauce and garam masala. Cook over medium heat until the mango is broken down and sauce is thickened.
10. Toss fried cauliflower in the sauce and coat well.
11. Serve in a dish and sprinkle with chopped green onion.
