Spinach, Tomato and Feta Dip

Description
I had lunch with a friend at a local Italian place and had this dip. It was a good start, but lacked something so I went home and made this – it was really good.
Ingredients
- 1 bag 12 Oz Baby Spinach
- 2 pieces Tomatoes, Seeded And Chopped Small
- 25 leaves Lemon Basil - Or Basil With A Splash Of Lemon Juice
- 1 cup Feta Crumbles
- ¼ cups Olive Oil
- 2 Tablespoons Champagne Vinegar
- Kosher Salt And Pepper To Taste
Preparation
Chop the spinach into small pieces and place into a bowl. Add the next 3 ingredients and mix well. Add oil and vinegar a little at a time until it taste good to you. Season with kosher salt and pepper.
