Description

I’m not a fan of store-bought spinach dips…they have a strange tanginess to them and they always taste old and watery. This one is fresh and full of flavor. The extra garlic, red onion and red pepper compliment the spinach nicely and the water chestnuts give it a great crunch. Everyone raves about it when I make it.

Ingredients

  • 1 block (8 Oz) Cream Cheese
  • 1 cup Sour Cream
  • 1 cup Mayonnaise
  • 1 package (2.2 Oz) Vegetable Soup Mix (I Prefer Knorr)
  • 1 Tablespoon Club House Italiano Blend, Or Whatever Seasonings You Like
  • 3 cloves Garlic, Minced
  • 2 Tablespoons Red Onion, Minced
  • ¼ whole Red Pepper, Minced
  • 1 can (8 Oz) Water Chestnuts
  • 1 package (10 Oz) Frozen Spinach, Thawed And Drained

Preparation

Mix (by hand or mixer) the cream cheese, sour cream and mayonnaise until creamy. Add vegetable soup mix, Italiano seasoning (even a bit of oregano and basil and a pinch of salt will do), and set aside.

Mince garlic, red onion and red pepper. Drain and roughly chop water chestnuts. Add to dip and mix well.

Add spinach and mix well. Chill in fridge for 1 hour before serving.

Tastes great with any kind of bread, on toast for breakfast, on baked chicken, with tortilla chips, pita chips, potato chips….the list is endless!
