Description

This is easily the best onion dip I’ve found—and I’ve been looking. Took it to a New Year’s Eve party and enjoyed a four-minute conversation with a complete stranger, who used the word “phenomenal” no less than twenty times.

Ingredients

  • 2 Tablespoons Unsalted Butter
  • 2 Tablespoons Canola Oil
  • 3 whole Medium Yellow Onions, 1/2" Dice
  • ½ teaspoons Cayenne (or Less, To Taste)
  • ¾ teaspoons Kosher Salt
  • ¾ teaspoons Cracked Black Pepper
  • ½ cups Sour Cream
  • ¼ cups Mayonnaise
  • ½ cups Cream Cheese, Softened

Preparation

Note: please keep an eye on your onions. I’m at 6000 feet, so it takes a lot longer to make anything happen up here. If you’re below 3500 feet, reduce cooking time accordingly—ya’ll should be able to enjoy this a good twenty minutes quicker.

Heat butter and oil over medium heat to just bubbling. Add onions and seasonings (¼ teaspoon cayenne lends a subtle heat—amp it up to ½ teaspoon for some real spice). Sauté for 15 minutes, until translucent. Reduce heat to medium-low for 30-35 minutes, stirring occasionally, until onions are nicely browned and caramelized. Remove from heat and cool completely.*

Combine remaining ingredients in a mixer or food processor until smooth. Fold in onions and serve at room temperature with potato chips or crudité. Our favorite is carrots … amazing.

If onion mixture seems overly greasy, remove to a paper-towel-lined plate and let rest while cooling. Varying interpretations of onion size will obviously result in varying … er … results.

This is the best onion dip. Onion-y sweet, spicy and oh so rich. Just made it for my husband for the Superbowl and he is loving it. I don’t usually eat chips and dip, but I’m gonna dig in right now! Great recipe.
