Description

A creamy, feisty dip with bold flavor and color.

Ingredients

  • 1 can (14 Oz. Can) Black-Eyed Peas
  • ½ cups Chopped Red Onion
  • ½ cups Chopped Red Pepper, Plus Extra For Garnish
  • 1 clove Minced Garlic
  • 1 whole Lemon, Juice Only
  • 2 Tablespoons Extra Virgin Olive Oil
  • ½ teaspoons Turmeric
  • ½ teaspoons Cayenne Pepper
  • ½ teaspoons Coriander
  • ½ teaspoons Salt
  • Blue Corn Tortilla Chips, To Serve

Preparation

Drain and rinse the black eyed peas. Toss all the ingredients into a food processor and blend until smooth and creamy. Garnish with chopped red pepper. Serve with blue corn chips for dipping.
