OMG! It’s a keeper! I have made this several times and shared a link to the recipe with several of my friends. My ‘guys’ have requested ‘spicier’ so I have added fresh jalapenos with great results. Thanks for sharing!

oh, yes. this will make you very popular at potlucks and family gatherings! i made this and it is YUMMO!! do not be afraid of the jalapenos. it is not spicy. fantabulous with tortilla chips or fritos.

Yum! Delicious! I cut the recipe in half for just 2 of us. I’ve made this recipe multiple times. Everyone loves it!

I also loved this dip; it made the food blog. I made it for a recent barbecue and the very large amount all got eaten. I agree with Jna: do not be afraid of the jalapenos. The other ingredients cut the heat very well!
I substituted the red bell pepper for half of a sweet onion (I forgot to get a pepper at the grocery) and used one less can of corn.

I made this last weekend to bring to a party and everyone loved it! It made quite a bit, but almost all of it was gone at the end of the night. I used one less can of corn, and added some lime juice as a few of the comments suggested. I served it with the suggested Lime chips as well and I think those are a must for this dip. Delish! I will be making this again this weekend for a Memorial day party!

Making this again for the weekend. Everybody loves it! It is so good, you could just eat it with a spoon! Best of all, my husband likes to make it. So, I can just enjoy!

This is delicious, although I did make some alterations:
- add lime juice
- use fresh jalapenos (finely diced) instead of canned for more zip
- add quite a bit of salt
I’m not convinced that the cheese and sour cream are even necessary, but I used them anyway. We used leftovers in omlettes – delicious!

This is such a great dish. So easy and so flavorful! I have made this for an easy cool dinner, and as a party dish. I’m making it again for a pot-luck at work tomorrow (about time I found a decent excuse to make this again!). It really is a crowd pleaser – especially when you have a lot of vegetarians in the group.

This stuff is so amazing!! I made it for New Year’s Eve and promptly realized that it made WAY too much- and then I ate all of it. We had the perfect amount for a friend & I to pig out on NYE, then leftovers the next day. SO good with tortilla chips- but don’t bother making any other dishes because they won’t be touched! This stuff rocks.
I’m making it again this weekend for Easter and I’m already drooling!

OK! Just made this delish dish again for a big fiesta tomorrow. After the whole how-much-does-this-make? shuffle of bowls, I found the way. Start with a huge bowl. Rest a colander in it. Start opening cans and dumping them in (rinse black beans first), then veggies. When everything is good n’ drained, dump out the bowl of liquid, throw the colander’s contents in the bowl, and then add the cheese and sour cream then cilantro and DONE! Seriously, this took like 5 minutes to make! Ok, maybe 10, but it would have been faster if I had an electric can opener. Awesome!

Okay, I literally drove myself nuts on Saturday looking for this recipe. I made this last summer and everyone went nuts for it. Anyway, I was having family over on Sunday and could not remember the name, forgot most of the ingredients and of course, did not save the recipe.
But, the thing that saved me was I remember the comment that it was the law to serve with lime chips.
Yippee!! I found it. This salsa is so good you cannot believe it. It was gone in an hour on Sunday. People, (me) love this combination.

Is it okay to use fresh corn instead of canned?

I’m sure it’s OK to use fresh – just make sure it’s cooked well, to avoid that starchy, tasteless flavor. Ooooh – try roasting it on the grill – that sounds yummy!

I made this last night and as promised I couldn’t stop sampling. I didn’t have any cilantro so I added some cumin. Very tasty indeed.

This dip is one of the best cold dips I have ever made and eaten. My guests absolutely love me because of it.

1) I want to marry you.
2) This makes a gigantic amount! I halved the recipe (although I did use the whole can of black beans) and I added a little splash of lime juice because it needed using up.
3) This recipe is fabulous as is, and the only change I would possibly make would be to use frozen corn and maybe some chopped water chestnuts for more crunch.
I made this as an appetizer for 4 people, we downed a dish of it before dinner and I forgot to give them some to take home. Oh dearie me, to be stuck with leftover dip…lol
I had it for breakfast ..yum.
And yes, it has to be a law that it be served with lime chips.

I just found this recipe over the weekend! I was looking for a side dish to make for a small spring get together we were going to. It was fantastic but made a boat load even after our hostess kept a large bowl full for herself!
I wanted to let you know what I did with the leftovers. I turned on my crock pot, added chicken tenderloins, a packet of taco seasoning and the leftover CORN DIP! Result: AMAZING! We ate it in taco shells and in “taco” salads TWICE in the same day, it was THAT good! I just thought I’d share an idea for leftovers… if you end up with any!
