Description

Easy and fool-proof recipe, these bite size pretzels are soft and warming, with a hint of butter and covered in cinnamon sugar.

Ingredients

  • 3 teaspoons Saf-instant Yeast
  • 2 cups Warm Water, divided
  • 1 Tablespoon Cane Sugar
  • 4 cups Unbleached All-purpose Flour
  • 1 teaspoon Sea Salt
  • 1 teaspoon Baking Soda
  • 2 Tablespoons Butter, Melted, For Brushing On Pretzels
  • FOR THE CINNAMON SUGAR:
  • ½ cups Cane Sugar
  • 1 teaspoon Cinnamon

Preparation

Preheat oven to 425ºF degrees. Line 2 large baking sheets with parchment paper.

In a large bowl, combine yeast, 1 1/2 cups warm water and sugar. Add flour and salt and knead until smooth. I did this by hand but you can use a stand mixer with a dough hook.

Grease a second bowl with nonstick cooking spray and place the dough into the bowl. Cover with a clean dish towel and let rise for 30 minutes.

Divide the dough into 8 equal parts. Do it as you would slice a pizza (vertical cut, horizontal cut and cross cut). Roll each part into a rope about 24 to 26 inches long and cut into bite size pieces and transfer them to the baking sheet.

In a small glass bowl, combine remaining 1/2 cup water and baking soda. Brush this liquid over the pretzel bites or use a spray bottle.

Bake 10 to 12 minutes, or until golden brown. Brush each hot baked pretzel bite with melted butter immediately after taking them out of the oven. Then dip them in the cinnamon sugar mix.
