An easy, interesting snack and a great picnic item!
Hard boil eggs – I do 7 minutes at hard boil for less done centers as pictured and 9 minutes for harder centers. Then immediately drain the water and peel eggs.
Preheat oven to 350F.
Put bread crumbs in a small mixing bowl.
Take a bit of sausage about the same size as the egg, flatten it in your hand and wrap it around the egg so that the egg is completely covered.
Roll the egg in bread crumbs and set aside.
Repeat with all eggs.
Bake on a cookie sheet for about 30 minutes until you are sure the sausage is cooked through – or you can also fry them over medium heat on the stove top. Either way, I don’t add any oil because of the grease from the sausage.
Serve eggs immediately or store in the fridge.

I was scared to look at this recipe as I thought scotch eggs were hideously bad for you. With three ingredients and small eggs, it could definitely be worse. I’ll be trying these out. Thanks!
