Yummy cheesy sausage with a spicy kick! Great hot or at room temperature. Also makes a delicious stuffing for mushrooms!
Preheat oven to 400 degrees F.
Measure the Bisquick into a large mixing bowl. Add the Ranch dressing seasoning, and blend well. Stir in the 4 cups of shredded cheese, then stir in the onions. Using a spoon or your hands [I used gloves], mix the 2 pounds of sausage into the Bisquick mixture until it is well incorporated. This will take a few minutes.
Spray a large sheet pan [or pans] with cooking spray.
Using your hands, roll the sausage mixture into walnut-sized balls, placing them about 2 inches apart on the baking sheet. Bake at 400 degrees for 15-20 minutes, or until golden brown. Makes about 3 dozen.
Serve hot or warm. Also makes a wonderful stuffing for mushrooms!
