Description

Popular and delicious cheese as an appetizer or a dessert.

Ingredients

  • 8 Tablespoons Butter
  • 16 ounces, weight Kasseri Cheese
  • 3 whole Eggs
  • ½ cups Milk
  • 2 cups Flour
  • 4 Tablespoons Bacardi 151
  • 4 slices Lemon

Preparation

Preset the oven to broil. Place a skillet (preferably iron) with the butter in high heat on the stove.

Cut the cheese into 1/2 inch slices.

Mix the eggs and milk in a bowl. Place the flour in a separate bowl. Dip the egg into the egg/milk and then into the flour.

Place the cheese slabs onto the skillet until lightly browned on each side, and then place them on a aluminum foil-covered pan.

Broil in the oven for about 5 minutes or until medium golden brown.

Remove the pan carefully and take it outdoors. Pour the brandy or rum evenly on top of the cheese immediately and CAREFULLY IGNITE (standing away from the flame, ignite quickly at the base of the pan—be aware of clear flames).

Wait until the flame dies down (you may need to re-light if the flame dies out too soon) or until the cheese is bubbling and brown. Squeeze the lemon on top of the cheese.

Carefully take the dish back inside and serve with pita bread.

Enjoy! It’s very hard not to.
