Easy, savory twist on potato pancakes. I threw these together one night, to rave reviews. This was my attempt to recreate the flavors. It was good, but I’m guessing it can better. Please let me know what you do to make these better!
Add olive or vegetable oil to griddle and preheat griddle to medium-high heat.
Mix all other ingredients together. Add more or less seasonings to taste.
Form a pancake with about 2 tablespoons of potato mixture and place on the griddle.
Flip after 4 to 5 minutes and cook for another 5 minutes on the other side.
Serve with grated asiago cheese and sour cream.
