Description

Everyone likes the salsa at their local Mexican restaurant. Now you can make it at home!

Ingredients

  • 6  To 7 Large Roma Tomatoes
  • 1 whole Large Onion
  • 2 whole Jalapeno Peppers, Or Other
  • 12 cloves Garlic
  • 1 bunch Cilantro
  • 4 whole Limes, Juiced
  • 8 ounces, weight Tomato Sauce
  • 1 teaspoon Salt
  • 1 teaspoon Cumin (optional)

Preparation

Slice the tomatoes, onion and peppers into smaller pieces. Use 1-2 jalapeno peppers without seeds if a mild salsa is desired, 1-2 jalapeno peppers with seeds if a medium salsa is desired, or more jalapenos with seeds, Serrano peppers or habaneros if you like a hot salsa.

Add a little each of tomato, onion, peppers, cilantro and garlic to your food processor or blender, pulsing until a uniform desired consistency is achieved. Continue until all is processed.

Transfer to a large pot, add in the lime juice, tomato sauce and salt. Cook for about 20 minutes, stirring occasionally. Taste, and add additional salt if needed, and cumin, if desired.

Serve warm or chilled with your favorite chips, nachos, quesadillas, fajitas or anything else you like.

Wow! This is exactly what I was looking for! Made it last week and again today! I had a ton of tomatoes in the garden so I peeled and seeded them since they aren’t Roma’s. awesome! Made a huge batch and am canning it! Thanks!
