Description

A great appetizer to bring to parties or to make as a snack to have at home. These quinoa pizza bites are a perfect treat!

Ingredients

  • 2-¼ cups Cooked Quinoa
  • 3  Eggs (large Or X-large)
  • 1 cup Pepperoni, Chopped Fine
  • ⅓ cups Mushrooms, Chopped Fine
  • ⅓ cups Black Olives, Chopped Fine
  • ⅓ cups Red Onion, Chopped Fine
  • 1 cup Shredded Mozzarella Cheese
  • 2 teaspoons Minced Garlic
  • 2 teaspoons (heaping) Pizza Seasoning
  • 1 teaspoon Paprika
  • ¼ cups Parmesan Cheese, Grated
  • 1 cup Pizza Sauce For Dipping

Preparation

Preheat oven to 350 F.

Prepare 1 or 2 mini-muffin baking tray(s). Recipe makes roughly 40 bites. Pan can be sprayed liberally with olive oil or paper mini-muffin liners also work well.

In a medium bowl, add all of the ingredients (except for the grated Parmesan cheese and the pizza sauce) and mix until combined. Spoon the mixture into the muffin pan filling each cup to the top (about 1 heaping tablespoon each). Press down gently to compact. Sprinkle with grated Parmesan.

Bake for 15 to 20 minutes. Remove them from the oven. Cool for 10 minutes before removing from the pan. Serve warm with pizza sauce for dipping.
