Description

A friend of mine gave me this recipe to try and it is so yummy. I love Potato Skins. This is an easy alternative and it makes a bunch.

Ingredients

  • 3 cups Frozen Cubed Hashbrowns (cooked)
  • 2 cups Cheddar Cheese, Shredded
  • 16 ounces, weight Sour Cream, Divided
  • ¾ cups Bacon, Cooked And Crumbled
  • ⅓ cups Green Onions, Chopped
  • Salt And Pepper, to taste
  • Flour Tortillas
  • 2 Tablespoons Butter, Melted

Preparation

Preheat oven to 350 degrees. Cook potatoes according to package directions. In a bowl, stir together cooked potatoes, cheese, half of the sour cream, bacon, onions and salt and pepper. Warm the tortillas, then spoon equal amounts of the mixture in the center of each tortilla. Roll tortillas burrito-style and brush with melted butter and place seam down on a baking sheet. Bake for 15 minutes, or until golden brown. Let cool for 5 minutes, then cut diagonally into halves. Serve with remaining sour cream.
