Description

Super delicious served over seafood or chicken. Refreshing, sweet and savory!

Ingredients

  • 1 cup Pineappe Chunks With Natural Juices
  • 2 whole Ripe Peaches, Peeled, Pitted And Diced
  • ½ cups Diced Jicama
  • ¼ teaspoons Cinnamon
  • 1 pinch Nutmeg
  • 4 slices Hickory Smoked Bacon, Cooked Crisp, Chopped
  • 2 Tablespoons Pure Honey

Preparation

Preparation time does not include 30-minute refrigeration time.

In a mixing bowl, add pineapple chunks and juices, diced peaches, diced jicama, cinnamon, and nutmeg. Stir well. Add bacon and honey and stir again. Cover with plastic wrap and refrigerate at least 30 minutes before serving.

This is excellent with chicken, seafood, or on top of tacos. Enjoy!

Two things caught my eyes—peach and bacon! First, I would have never thought to use peach with pineapple and jicama. It’s such a great idea, Cheryl. Second…bacon…no more need to be said! Except yum! Adding to my recipe box.
