This chutney provides a healthy burn and a little goes far. It is recommended as an accompaniment to Mediterranean Merguez Flatbread, which is also posted here in my recipe box or under Quick Breads.

Fresh, tangy and easy mango coriander chutney. It’s great to serve with snacks. Can be pre-made and stored for a week in fridge.

Do you really mean to cover the cookie sheet with wax paper or should it be something else?
Thank you.

wax paper—but i suppose you could use tin foil… i prefer wax paper as it doesn’t stick!

The one time I ever put wax paper in my oven it started smoking very badly. I would suppose you could use parchment paper though right?

I used a Silpat® non-stick baking mat instead of wax paper, parchment or foil with excellent results.
