Description

This recipe is so tasty and so easy and so wonderful and definitely not a typical picnic choice. But if you are looking for something just a little different, easy and tasty for a romantic picnic with your sweetie, this fits the bill perfectly. Pair it with your favorite beverage, such as a glass of red wine and serve it with fruit and you have the perfect evening!

Ingredients

  • ½ loaves French Bread, Cut Lengthwise
  • 2 Tablespoons Olive Oil
  • ½ cups Pesto (homemade Or Your Favorite Store Bought)
  • 8 slices Tomato
  • 1 dash Salt
  • 1 dash Pepper
  • ½ cups Parmesan Cheese, Shredded

Preparation

Cut the French bread in half lengthwise. This recipe uses only half of the loaf at a time. Brush the olive oil over the bread. Place under the broiler for about 3 minutes to warm the oil and bread so that it soaks into the warm bread. Spread the pesto evenly over the bread. Place tomato slices evenly on the bread and salt and pepper the tomato slices only. Place back under the broiler for 2 minutes more. Take out and spread Parmesan cheese evenly. Place back under the broiler until the cheese is melted and begins to brown slightly.

Serves 6 to 8 (depending on how big you cut them).
