Description

Pulled this recipe from my local paper. Yummy treat for kids and you. They are super easy to make and are almost like a cookie. Easy to store and munch on all week.

Ingredients

  • ⅓ cups Creamy Peanut Butter
  • ½ cups Honey
  • 1 Tablespoon Maple Syrup
  • 1 teaspoon Extra Virgin Olive Oil
  • 1-½ cup Uncooked Old-fashined Oatmeal
  • ½ cups Chopped Almonds
  • ½ cups Sweetened Dried Cranberries
  • ¼ teaspoons Ground Cinnamon
  • ⅛ teaspoons Sea Salt

Preparation

1. Preheat oven to 325ºF. Line a rimmed baking sheet with parchment paper; set aside.
2. Combine peanut butter, honey, syrup and oil in a small pan. Cook over low heat until melted and the mixture can easily be stirred together. Remove from heat and set aside.
3. In a deep bowl, combine oats, almonds, cranberries, cinnamon and salt. Toss to mix well. Pour peanut butter mixture over oat mixture and, using a rubber spatula coated with cooking spray, stir until everything is evenly coated. Drop by heaping tablespoons onto the prepared baking sheet. Bake 20 to 25 minutes, until golden and crisp. Set the tray on a wire rack and let cool completely.

Store cooled in an airtight container or tin up to 3 days.

My husband loved these and said they were addictive. He then asked for another batch. I substituted the oil with coconut oil. Maybe it’s the humidity, but these didn’t turn out as crunchy as I was expected. They were more gooey. Delish no less.
