Description

This is really two recipes- I always make them at the same time for some reason!

Spinach, Bacon & Swiss Mini Quiche, Ham, Broccoli & Cheddar Mini Quiche

Ingredients

  • 1 box Refrigerated Pie Crust (comes 2 To A Box)
  • 3 whole Eggs
  • 1 cup Heavy Whipping Cream
  • ½ cups Fresh Spinach, Chiffonade
  • ½ cups Swiss Cheese, Shredded
  • ½ cups Real Bacon Bits
  • 3 ounces, fluid Ham, Diced Into Small Dice
  • ½ cups Broccoli, Chopped
  • ½ cups Cheddar Cheese, Shredded

Preparation

1. Preheat the oven to 350˚ F. Spray mini muffin pans.

2. Roll pie crust just a tad thinner to even it out. Cut into 2 inch circles. Press into mini muffin pans.

3. In a medium bowl, beat the eggs and heavy cream together. Season with pepper.

4. Add spinach, most of the Swiss cheese, and bacon bits to half the shells.

5. Add ham and broccoli to half the shells.

6. Pour in egg mixture to all shells. Sprinkle with remaining cheeses. (Swiss over the spinach and bacon, Cheddar over the ham and broccoli.)

7. Bake for 15 to 20 minutes in the preheated oven, or until the tops are lightly browned.

8. Allow mini quiches to cool slightly in the pan before carefully removing with a small knife or spatula.
