Description

An addictive and refreshing dip. Great on crackers, flatbread, or veggies!

Ingredients

  • 5 spears Asparagus
  • 1 Tablespoon Butter
  • 1 whole Lemon, Zest And Juice (You May Only Need Half Of The Juice)
  • 8 ounces, weight Cream Cheese
  • ½ teaspoons White Pepper
  • 1 pinch Cayenne
  • 2 pinches Salt

Preparation

Cook the asparagus in water until softened, about 5 minutes.

Place asparagus in a food processor or blender and pulse until pureed. Add in the butter and pulse again.

Zest the entire lemon and place in a mixing bowl with the paddle attachment. Add in the rest of the ingredients and beat until well combined. Add half the juice of the lemon to the mixture and beat again.

Adjust the seasoning to taste. Store in the fridge until ready to serve!

My guests absolutely loved this! It was so easy to make. I used an ice bath to keep the asparagus bright green before pulsing and served with Rosemary Raisin Crisps from Trader Joe’s. This would be good with artichokes, also.
