Description

When I was working at an authentic Italian restaurant, they served seasoned beef and sausage stuffed mild peppers that was truly great as appetizer for two or four people or even eaten as a meal. I devised my own light version at home to watch my figure, and it is still very flavorful and delish!

Ingredients

  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • ½ teaspoons Ground Savory
  • ½ teaspoons Ground Black Pepper
  • 3 teaspoons Italian Seasonings
  • 6 dashes Liquid Smoke
  • 1-½ pound Ground Turkey, Lean
  • 4 whole Mild Peppers
  • 8 Tablespoons Light Marinara Sauce
  • 8 Tablespoons Fat-free Mozzarella (optional)

Preparation

In a large bowl, mix all spices, herbs and liquid smoke into ground turkey thoroughly by hand. Refrigerate to let the flavors set in while prepping the peppers.

Meanwhile, rinse peppers. Cut a “T” into the bottom (not the stem) end of the pepper. Do NOT cut through all the way to the other side of the pepper that will be resting in the pan! Make sure you leave the tops on!

Carefully clean inside to deseed and clean out the veins of the peppers. Stuff each pepper genereously with a teaspoon with the prepped ground turkey stuffing.

Place stuffed peppers into a 8×13 pan (sprayed with non-stick cooking spray). Top each pepper with 2 tablespoons each of marinara sauce, covering the stuffing and pepper.

Bake peppers at 375ºF for one hour or until turkey stuffing is throughly cooked. Periodically sauce the peppers throughout baking time. At the last five minutes, top peppers with 2 tablespoons each of shredded mozzarella cheese if you like.

Serve hot!
