Description

This dip has a nice kick from the garlic, red onion and cayenne pepper and pairs well with tortilla chips and fresh veggies. I think it would be great as a sandwich spread as well! And check out the nutrition facts: low cal, almost no fat or sugar and a good amount of fiber and protein. Score!

Ingredients

  • 2 cans (15 Oz. Size) Black Beans, Drained And Rinsed
  • ¼ cups Reserved Liquid From Black Beans
  • ¼ whole Medium Red Onion, Chopped
  • 1 whole Roma Tomato
  • 2 cloves Garlic
  • 2 Tablespoons Fresh Cilantro, Chopped
  • 1 Tablespoon Lime Juice
  • ½ Tablespoons Apple Cider Vinegar
  • 1 teaspoon Cumin
  • ½ teaspoons Sea Salt
  • ¼ teaspoons Cayenne Pepper

Preparation

1. Place all ingredients in a blender or food processor and puree until smooth.

2. Transfer the dip to a bowl, add more sea salt to taste, garnish with leftover cilantro and serve. It can be stored in the fridge, but I think it tastes best at room temperature.

This dip is so easy to make and incredibly yummy. I served it with some veggies, it was a huge hit!
