Hummus made with a southern spin. Use a local pea or bean, like purple hull peas, soy beans, lima beans or some other pea you may have available in your area (to replace the usual chick pea) in this delicious, vegetarian, healthy, garlicky dip. Great with your choice of sliced tomatoes, cucumbers, celery, raw sliced squash or zucchini, or Greek olives and warm pita bread.
Place all ingredients in a blender or food processor and blend until smooth. Serve with your choice of sliced tomatoes, cucumbers, celery, raw sliced squash or zucchini, Greek olives and warm pita bread, or your favorite warm tortillas. I made these variations for a local art walk using local produce and got rave reviews!
