Description

You won’t want to purchase a granola bar after having one of these gems! These are made from wonderful ingredients to make delicious and healthy energy bars. Perfect for an on-the-go snack after a workout. These are great to refrigerate for up to 2 weeks and freezer-friendly.

Ingredients

  • 1 cup Rolled Oats
  • ¾ cups Whole Wheat Flour
  • 1 teaspoon Ground Cinnamon
  • 3 teaspoons Salt
  • ½ cups Raw Honey
  • ⅓ cups Unsweetened Applesauce
  • ¼ cups Olive Oil
  • 1  Egg, Lightly Beaten
  • ½ cups Dried Cherries, Chopped
  • ½ cups Walnuts, Chopped
  • ½ cups Almonds, Chopped
  • ½ cups Pistachios, Chopped
  • ½ cups Pumpkin Or Pepita Seeds

Preparation

Preheat oven to 325ºF.

In a small bowl, combine and whisk together rolled oats, whole wheat flour, cinnamon, and salt.

In a large bowl, whisk honey, unsweetened applesauce, olive oil, and beaten egg to combine all ingredients. Stir in oat mixture to combine.

Stir in dried cherries, chopped walnuts, chopped almonds, chopped pistachios, and pumpkin seeds.

Coat an 8 -inch square Pyrex with coking spray. Spread the prepared oat-nut mixture into the prepared pan and bake for approximately 25–30 minutes. A toothpick inserted in the center should come out clean. 25 minutes usually works for me.

Cool on baking rack and then cut int 15 bars.

Storing:
At room temperature, store in an airtight container for 3 days. Or refrigerate in an airtight container for 2 weeks.
To freeze, individually wrap bars in plastic and place in freezer bags for up to 3 months. Thaw at room temperature for 2 hours. Reheat at 350ºF for approximately 10 minutes. To microwave, wrap a bar in a paper towel and microwave on high for 20 to 30 seconds.
