Description

This dip is so flavorful and so creamy, no one will even know that it’s actually healthy. At 140 calories for a 1/2 cup serving, you can help yourself.

Ingredients

  • 1 cup 1% Cottage Cheese
  • 4 ounces, weight Fat-free Cream Cheese
  • ½ whole Yellow Onion, Peeled And Cut Into Wedges
  • 14 ounces, weight Canned Artichoke Hearts (marinated In Water And Salt), Drained
  • 9 ounces, weight Frozen Spinach, Thawed, Drained And Roughly Chopped
  • ¾ teaspoons Garlic Powder
  • ½ teaspoons Black Pepper
  • ½ cups Shredded Italian Mix Cheese
  • ½ cups Shredded Part Skim Mozzarella

Preparation

Preheat oven to 350 F.

For this recipe, you need a small or medium sized blade for your food processor. Add cottage cheese into the food processor and blend it until smooth. Add the cream cheese and blend again until smooth. Set aside in a small bowl.

Take the onion and drained artichoke hearts and chop them in the food processor. Stop just before they become pureed. Pour into the bowl with the cottage cheese and cream cheese mixture. Add the spinach, garlic powder, pepper, and both shredded cheeses. Mix well. Pour into a greased pan (I used a 9×9 square pan).

Bake at 350 F for 20 minutes or until bubbling. Remove dish from the oven and allow dipe to cool for about 10 minutes before serving (this will allow everything to set a bit). Dig in!

Recipe makes 6 servings; 140 calories per 1/2 cup serving.
