Description

A party in your mouth: basil, tomatoes, goat cheese, garlic and baguette bread. This recipe is fabulous for a party or an impromptu dinner at home.

Ingredients

  • 5 whole Tomatoes, Chopped
  • 2 cloves Garlic, Minced
  • 1 bunch Fresh Basil, Coarsely Chopped
  • 4 Tablespoons Extra Virgin Olive Oil Plus Extra For Drizzling On The Bread
  • ½ teaspoons Salt
  • ¼ teaspoons Ground Black Pepper
  • 1 whole Baguette Bread, Sliced
  • 1 log Goat Cheese (4 Oz Size)

Preparation

In a medium bowl combine the tomatoes, garlic and basil. Add the four tablespoons of olive oil and toss to combine. Season with salt and pepper according to your liking.

Turn the broiler on high. Place the slices of bread in a single layer on a baking sheet and drizzle with olive oil. Toast the bread under the broiler for approximately 5 minutes, being careful not to let it burn.

Transfer the bread to a serving platter, and spread each slice generously with goat cheese. Spoon the tomato, basil and garlic mixture evenly over the bread slices and serve immediately. Eat up!
