Description

A fabulous, easy appetizer that combines an herby vinaigrette with goat cheese, toasted bread and sliced cucumber.

Ingredients

  • ½ cups Extra Virgin Olive Oil
  • 2 Tablespoons Balsamic Vinegar
  • 2 Tablespoons Lemon Juice
  • 1 teaspoon Honey
  • 1 teaspoon Salt And Pepper, to taste
  • 1 whole Small Shallot, Chopped Finely
  • 2 Tablespoons Fresh Herbs You Have On Hand (Parsley, Dill, Basil---I Used Rosemary, Thyme And Chives. Any Three Will Work.)
  • 8  Thick Slices Of Bread, A Country Loaf Works Well
  • 8 ounces, weight Soft Goat Cheese
  • 1  English Cucumber, Washed, Unpeeled, And Sliced Thickly

Preparation

In a small bowl whisk together all of the ingredients except the bread, cucumber and cheese. You can start with the oil, vinegar, lemon juice, honey and salt/pepper- then toss in the herbs and shallots after that’s mixed nicely.

Here’s where you get to be creative: you can drizzle the vinagrette on the slices of bread, then spread on the cheese and place a cucumber slice on top, or drizzle on the dressing after assembling the bread/cheese/cucumber- or however you please! That’s the beauty of it. There’s no wrong way, to eat this bruschetta.
