Description

The perfect summer salsa that has a sweet twist.

Ingredients

  • 8 whole Strawberries, Diced
  • 2 whole Kiwi, Diced
  • ¼ cups Blueberries
  • ¼ cups Blackberries, Cut In Half
  • 1 Tablespoon Fresh Lemon Juice
  • 1 teaspoon Agave Nectar
  • Cinnamon Sugar Pita Chips, For Serving

Preparation

1. In a medium bowl, stir together the strawberries and kiwi. Gently add in the blueberries and blackberries. Stir carefully so you don’t turn the salsa purple.

2. Squeeze fresh lemon juice over the fruit. Add a tiny drizzle of agave nectar, about 1 teaspoon, to bring out the sweetness in the fruit. Stir carefully.

3. Serve with cinnamon sugar pita chips.

Note: the fruit salsa is best eaten the day it is made.

I’ve been making a variation of this recipe for years and I absolutely love it! It’s great to bring to potlucks to be served with the other savoury appetizers; people are very pleasantly surprised by it.
I pump the whole thing up a little by stewing some of the fruit a little with a 1-inch piece of fresh ginger (finely diced) and 2 tbsp or so of cinnamon. Once I even threw in 1/8 tsp of cayenne for extra spice. At the end when it’s cool I stir in the remaining chopped fruit to keep the chunky factor high.
And for anyone interested in making this recipe: use whatever fruit you have on hand, it really works with absolutely ANYTHING!
