Description

I made thses egg puffs for my dad. He loved them … I love you daddy. Miss you.

Ingredients

  • 1 box Puff Pastry Sheets, 14-17 Ounce Box
  • 1 Tablespoon Oil
  • 1 whole Onion, Chopped
  • 3 whole Tomatoes, Chopped
  • 1 whole Carrot, Chopped
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Garam Masala Powder
  • Salt To Taste
  • 6 whole Hard Boiled Eggs

Preparation

1. Pull the puff pastry sheets out of the refrigerator a half an hour before you begin the preparation.

2. Heat oil in a pan over medium heat. Add chopped onions. When they become soft, add chopped tomatoes and chopped carrot. When they are soft and fully cooked, add red chili powder, salt and garam masala powder. Mix to combine, remove from heat and set it aside.

3. Cut the boiled eggs in half.

4. Preheat the oven to 350 F. Take a puff pastry sheet, put a tablespoon of the prepared curry mixture in the center and top with a half boiled egg. Fold the dough around the filling and press the edges to seal. Place on a foil lined baking sheet. Repeat the procedure for the remaing puffs.

5. Put the baking sheet into the oven and bake for 20 minutes. Half way through the bake time, turn the puffs onto the other side if necessary. Enjoy with a cup of tea.
