Description

I think the name says it all…mushrooms, provolone, crab deliciousness.

Ingredients

  • 1 package White Mushrooms (1 Large Or 2 Small Packages)
  • 1 whole Bell Pepper
  • 4 stalks Green Onion
  • 2 cloves Garlic
  • 1 stick Butter, Divided
  • Salt And Pepper
  • Italian Seasoning
  • 2 cans Crab Meat, Drained(or You Can Use 1 Can Crab 1 Can Tiny Shrimp)
  • 1 package Ritz Crackers (1 Sleeve)
  • 1 package Provolone Cheese

Preparation

Preheat oven to 400 degrees.

Remove stems from mushrooms and set both aside.

Chop bell pepper, green onion, garlic, and half to 3/4 of the mushroom stems. (Food processor makes this step much faster.)

Place chopped veggies in saucepan and add 1/4 stick of butter. Cook on medium heat until veggies are tender, about 5-8 minutes. Add salt, pepper, and Italian seasoning to taste.

Remove from stove and add crab meat and Ritz crackers to the cooked mixture. If mixture is a little dry, add 1 to 2 tablespoons melted butter. Sometimes I add a little more salt, pepper, and Italian seasoning until I reach desired flavor.

Place 1 to 2 tablespoons of butter in clear 9×13 glass baking dish. Stuff mushrooms with crab mixture and place in dish. You want the mushrooms as close together as possible in the dish.

Put pan in oven and bake for 15 minutes. Remove from oven and turn to broil setting. Place the provolone cheese over the mushrooms and put back in the oven for 2-3 minutes or until cheese is melted.

Remove and let cool for 5-10 minutes.
