Description

A light tasting spread, perfect for spring or summer get togethers!

Ingredients

  • 2 whole Cucumbers
  • 1 whole Yellow Onion
  • 2 Tablespoons White Vinegar
  • 2 Tablespoons Sugar
  • 16 ounces, weight Cream Cheese, Room Temperature

Preparation

1. Grate the cucumbers and onion into a mesh strainer. Transfer to a clean cloth or paper towel to remove additional moisture.

2. Put grated cucumbers and onion into a bowl and mix vinegar and sugar into it. Put this mixture into a bowl and refrigerate for 1 hour.

3. After an hour, mix the cream cheese with the cucumber mixture, gently so as not to pulverize the cucumber.

4. Refrigerate for at least 2 hours. Serve over crackers or in small sandwiches.

This is an AMAZING spread. My grandmother used to make sweet and sour cucumbers that had the same flavor in a sour cream sauce. This is the same in spread form. I made this for a party and people went crazy for it. It’s great on crackers or crudites (or by the spoonful). YUM.

This is delicious and so easy to prepare!! I made it a couple months ago for a meeting and those that liked cukes loved it. I am making again today for a party hoping there is going to be some leftover for my family!

Easy to make, incorporates some veggies, delicious and gets eaten up quickly! Great on crackers or as a veggie dip.
