Description

I grew up with my Grandma Elisa. She was an expert in the kitchen. She made miracles with the simplest ingredients. This recipe, was part of her repertoire, Barriguitas de Canela, (Cinnamon Bellies).

Ingredients

  • 2 cups All-purpose Flour
  • ¼ cups Sugar
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Salt
  • ½ teaspoons Ground Cinnamon
  • ¾ cups Milk
  • ¼ cups Vegetable Oil
  • 1 whole Egg
  • 2 quarts Vegetable Oil, For Frying
  • 2 Tablespoons Sugar, For Dusting
  • 1 teaspoon Ground Cinnamon, For Dusting

Preparation

1- Mix flour, sugar, baking powder, salt and cinnamon in a big bowl.

2- In a separate bowl, beat the egg with the milk and the oil.

3- Pour the egg mix in the dry ingredients mixture. Combine well.

4- Let the batter to rest a couple minutes. The batter will become spongy.

5- Heat the oil to medium high.

6- Using a tablespoon, pour portions of the batter into the heated oil and fry until golden brown.

7- Remove from the oil and place the bellies in a paper towel to absorb any oil excess.

8- Mix the 2 tablespoons of sugar with the teaspoon of cinnamon.

9- Dust the bellies with the sugar/cinnamon mixture.
10- Enjoy!

The consistency of these are more like a cake donut, they were very good!

These are really good and quick to make! One note…make sure to scoop them no larger than the tablespoon, maybe a little smaller. They may not cook through in the center, and who wants their day ruined by that? Delicious for breakfast with a cup of coffee! My daughters put a little powdered sugar on theirs and it was tasty too. Thanks for sharing!
