Ceviche is one of those dishes that tends to intimidate people. But it is simply raw seafood marinated in citrus juices such as lemon or lime. The acid of the juices really acts as a “cooking” method for the seafood. The origins of this dish are disputed but all I know is that in my island, it has always been a staple.
Note: I have played around with different types of seafood, and my favorite combo is squid, scallops and shrimp.
Take chopped calamari fillets, shrimp and scallops, and put in a bowl.
Then add lemon or lime juice over the seafood until it is covered. Give it a good stir and then set aside while you work on the seasonings.
The seasonings are simple: tomato, red onion, a handful of cilantro, serrano pepper, and garlic.
Chop everything and add to the bowl containing the marinating seafood. Let it marinate overnight.
Serve over lettuce leaves and enjoy!

My best friend’s family is from Peru, and they made this dish for a barbeque that I attended. The only difference was, theirs was quite salty!
