This is a delicious appetizer that’s always a hit! This is a great dish to take to a party if you’ll have access to a microwave. Prep the brie and pesto before you leave, and then heat up when you arrive. Also, try cubing the brie and tossing everything with pasta for a super, easy dinner.
Trim rind from top and sides of brie. Leave bottom rind intact. Put on a microwave safe plate.
Drain oil from sundried tomatoes, but reserve oil and set aside.
In a food processor, combine the remaining ingredients. Add about 1 tablespoon of the reserved oil and salt and pepper. Pulse until smooth. Add more oil if needed.
Put pesto on top of brie and microwave on medium until soft and a little bit melted, at 15-second intervals.
Serve warm with crackers.
